It’s not just meat that you can marinade. These are a lovely summer side dish that would go very nicely with some al-fresco eating, as a side dish or even part of a meze or tapas meal. Za’atar is a Palestinian spice blend with herbs, sesame seeds and sumac. It is very nice mixed with oil as a dipping sauce for bread, or can be used in marinades such as this.
Ingredients
- 1 large courgette
- 1 tsp of Za'atar
- 1 small glove crushed garlic 6-8 tbsp of good olive oil
- Juice of half a lemon
- Salt and pepper
Instructions
Slice the courgette lengthways, around 5mm thick.
Mix the marinade ingredients in a bowl and thoroughly coat the courgette.
Leave in a sealed container to marinade for 2-3 hours, turning occasionally to get an even coating of marinade.
Cook for 5 minutes each side on a hot griddle or BBQ.
Notes
You could crumble some feta cheese over this, or grate some hard sheep's cheese such as Pecorino.
