Green Summer Smoothie

A vitamin boost to keep you going on a hot day, or even a cold one for that matter.

You will need a smoothie maker and an avocado, an apple, a banana and two big handfuls of washed spinach to get started. There are no end of tasty extras to put in, for example citrus juice, apple juice, parsley, mint, cucumber, spirulina, acai, maca powder, milled linseed or hempseed, honey or agave nectar, the list goes on – get creative!

Add 3 or 4 ice cubes to the bottom of the smoothie maker and pour over a few splashes of your non-dairy milk of choice, I used oat milk here. Add the peeled banana, avocado and apple and press down the spinach. Some herbs work well, I used parsley but mint would work well. If you have any spirulina it adds to the deep, green colour so add a heaped teaspoon of that as well as some acai. Some milled seeds would be a welcome addition, as is a squeeze of lemon or lime juice.

Finish with a small squeeze of honey and blend for a full 2-3 minutes until really smooth. If the smoothie is too thick, add a little cold water until you get the consistency you want.

A great stop-gap meal on the go, or a healthy treat at any time of the day.
