A different and delicious side-salad for your BBQ. I am a big fan of grilling vegetables on the BBQ and the grilled fennel in this salad adds a lot of flavour and is very refreshing. Fennel also aids the digestion, which can come in handy at a BBQ, if you are the sort to easily overdo it! This would be a lovely main meal in its own right, perhaps with the addition of some salty cheese or even strips of grilled chicken breast.
Ingredients:
- 1 large fennel bulb
- half cucumber
- 1 Little Gem lettuce
- 1 ripe avocado
- Handful of chopped chives
- Olive oil, a squeeze of lemon, salt and pepper
First, slice the fennel bulb lengthways into approximately 1cm strips. Coat them in oil and a little salt and put them on to the hot bars of the bbq – or a griddle pan would work just as well. Cook for a few minutes either side until it takes on a lovely brown colour and set aside to cool.
Next, roughly chop the lettuce and cucumber. Mix in a bowl and add the peeled, sliced avocado. Cut the cooled fennel into smaller slices and add to the salad bowl. Dress with a glug of good olive oil, a squeeze of lemon and some salt and pepper.
