Who doesn’t love a nice crumble? A great pudding, I’m sure we can all agree, but a lot of butter, flour and sugar for those of us that need to count the calories. This version uses oats and mixed nuts for the topping and agave nectar and cinnamon instead of sugar and tastes absolutely delicious. It’s so healthy, its’s almost a breakfast!
You can sneak some crumbled up biscuits into the crumble mix too, like Lotus Biscoff, but that does make the calorie count creep up. I won’t tell anyone if you won’t…

Ingredients
- 5-6 sticks of rhubarb.
- 1 teaspoon cinnamon
- 5-6 tablespoons agave nectar
- 100g oats
- 30g chopped mixed nuts
- 50g flaked almonds
- 30g chopped pecans
Instructions
Cut the washed rhubarb into 4-5cm chunks and put into an oven-proof bowl. You want them to sit on top of each other a bit as they will reduce in size during cooking.
Sprinkle the cinnamon and a good drizzle of agave nectar over the rhubarb and mix it up.
Mix all the crumble ingredients together in a bowl and pour over the rhubarb.
Place into a preheated oven at 190º for 30 minutes, or until the rhubarb is bubbling around the sides.
Allow to cool and serve with yoghurt or low-fat ice cream.
Notes
Amounts for the various mixed nuts are variable, use what you have and see how it tastes! Honey can easily be used instead of agave nectar.
