Any time of day, any time of year, this will be ready in mere minutes and will be utterly delicious. ‘Nduja, if you haven’t yet discovered it, is a spicy, spreadable meat paste from the south of Italy and is an awesome addition to a huge variety of meals. It can be tossed through pasta, added to soups and sauces or just spread over some good quality bread.
If you want a snack in a hurry, toast up a good slice of bread, sourdough works well, and generously cover with ‘nduja. Scatter over some rocket leaves and place a whole ball of burrata on the top. Drizzle with olive oil, lemon juice, salt and pepper and prepare your self for a thouroughly delicious snack or light lunch.
