Spaghetti with ‘Nduja and Mascarpone

Another quick and amazing meal that can be on your plate in less than 15 minutes with almost zero washing up – what could be better? The heat of the ‘Nduja, the cooling creaminess of the mascarpone and a tang of sour lemon juice to cut through it, truly a great and simple meal.

To make it, simply cook the pasta in plenty of salted, boiling water. When cooked, reserve 3 or 4 tablespoons of pasta water in a cup and drain the pasta. Return to the pan and add a few teaspoons of ‘nduja paste and a tablespoon of mascarpone. Finish with a squeeze of salt, some pepper, the reserved pasta water and a light drizzle of extra virgin olive oil. Mix well and tuck in.
