Spicy and sweet, lovely on the BBQ or can easily be done in the oven or a griddle pan. This is marinated simply in yoghurt, lime juice, sriracha sauce and honey, but you could easily swap the yoghurt for coconut milk for an extra dimension of flavour. The important bit is to keep some of the marinade to one side so that you can brush it over the meat while it is grilling.
Ingredients
- 4 bone-in chicken thighs
- 6 tbsp Sriracha hot sauce
- 3 tbsp honey
- 2 tbsp plain natural yoghurt
- Juice of 1 lemon
- Salt and pepper
Instructions
Remove the skin from the chicken thighs and trim away any fatty sinews.
Lightly score the surface of the chicken on both sides to allow the marinade to penetrate.
In a bowl, mix together the Sriracha, honey, lemon and yoghurt. Season to taste, add more Sriracha if you like it spicy.
Reserve some of the marinade in a separate bowl for later.
Mix the chicken with the marinade and leave in a sealed container in the fridge for at least 4 hours or even overnight,.
When you are ready to cook, put the chicken onto a hot BBQ or griddle pan. Cook for around 20 mins at a gentle heat, turning regularly. Using a pastry brush, liberally coat the chicken with the reserved marinade as it cooks
Allow to stand for a few minutes and tuck in.
Notes
This would also be perfectly good cooked in the oven, 180º for 20-25 minutes.
