10 minute Mushroom and Blue Cheese on Toast

If there is anything I like more than a meal ready in 10 minutes, with hardly any washing, that has absolutely bags of flavour, I don’t know what it is! This is a great fridge raid go-to and will have you eating your din-dins within 15 minutes of being in the house, if you so desire.

I took some nice sourdough bread and got it under the grill. In a pan, fry a couple of large, flat mushrooms with a knob of butter and some sprigs of thyme. Turn them over after 3-4 minutes and set aside. Hopefully you’ve turned the toast by now, or you may be standing in a smoky kitchen. Butter the toast and layer on some cooked meat. I used some spiced speck ham but any kind of ham or even chicken would work, or leave it out to go veggie.

Now, the magic ingredient is blue cheese. I used Cambazola, which is very mild, but you can go with a Gorgonzola or a Stilton, or even just some good old cheddar. Layer on a few slices and get it under the grill until bubbling and melted. While you are waiting, knock up a salad dressing with 4 tablespoons olive oil, 1 tablespoon white wine vinegar, the juice of half a lemon and some salt and pepper. Whisk until nicely thickened and dress some salad leaves to go on the side.

The lemony dressing, the blue cheese, the mushroom…a great combination. You should now be left with an empty plate, one pan and maybe a knife or two. And relax!
