A healthy dessert that feels light, refreshing, virtuous and clean-living!
Ingredients (makes two bowls)
- 4 big tablespoons of good quality Greek yoghurt
- 4 big tablespoons of shop-bought or home-made raspberry sorbet
- A handful of strawberries and raspberries
- A handful of pistachios
Excuse the lack of precise measurements, just go by eye and put in what you fancy.
Put a few tablespoons of sorbet in each bowl and next to it, dollop a nice gloopy heap of fresh Greek yoghurt. Cut the strawberries if they are large and scatter the fruits over or around the sorbet and yoghurt. Bash up the pistachios in a mortar and pestle; I like to have them mixed, ie some large bits and some ground smaller, for an interesting texture.
That’s it! Drizzle over a bit of honey if you want a bit more sweetness. This is a lovely palate-cleansing dessert that is delicious and healthy.
Ingredients could easily be swapped out. Replace the fruits with blueberries or chopped melon, add chopped hazelnuts or walnuts for crunch and of course different flavour sorbets.
