Kimchee Fried Rice

Kimchee is so addictive! If you haven’t discovered it yet, I recommend that you seek some out. Widely available in supermarkets these days, it is a fermented and pickled vegetable dish with lots of chilli and I can’t get enough of it. It’s great as a healthy and satisfying snack on it’s own and takes on a whole new dimension when fried up with a bit of rice and topped with a fried egg.

First, pre-cook rice and allow to cool, or use some leftovers. Gently fry some garlic and ginger in a little neutral oil (groundnut or vegetable, for example) and then throw in a whole jar of kimchee, juices and all. Add the rice and cook through, adding some soy sauce and sesame oil for flavour. To serve, squeeze some lime juice in and serve with sliced spring onions and a few sesame seeds. A fried egg makes the perfect topping for a really quick and really easy midweek supper.
