Palm Heart and Melon Salad with Balsamic Dressing

Palm hearts are a very healthy addition to a salad and very popular around the world. Adding some fresh melon to any salad makes for a sweet, refreshing taste that works very well with citrus, vinegar or salty flavours. A balsamic dressing is the perfect compliment, with the sweetness working well. Some bitter leaves would work well, such as chicory, but I used butterhead lettuce. A sprinkling of feta would be great, or some fried halloumi.

Simply toss halved cherry tomatoes, sliced cucumber, red pepper, celery, palm hearts and melon together. Make a dressing by whisking together 4 tablespoons olive oil, 1 tablespoon of balsamic vinegar, a squeeze of lemon and some salt and pepper. Mix the salad veg in the dressing and serve with some mixed leaves and topped with some crunchy seeds, such as pumpkin or sunflower.
